The best thing about summer? Possibly tomatoes. But really, bruschetta is possibly the easiest and tastiest appetizer out there. And since I'm just getting acclimated to my new house/kitchen, the easier the better. My recipe:
- container of mixed cherry tomatoes (or about 4 vine-ripened tomatoes)
- handful of basil leaves, chopped (I grabbed mine from the basil plant on my kitchen windowsill)
- 3 cloves garlic, minced
- 2 T evoo
- pinch of salt and pepper
- loaf of crusty bread
Mix the first five ingredients in a bowl and let sit for a half hour. Scoop tomatoes on bread and drizzle with balsamic glaze.
